DAY
NIGHT

WE HARVEST OLIVES AT TWO DIFFERENT MOMENTS OF THE DAY
BECAUSE LIGHT CHANGES THE OLIVE.

And because the fruit itself is not the same.

two harvests.
one origin.

WHY DO WE DO IT?

In our land, light and temperature shape two very different moments in the field.

When daylight fades and temperatures drop, the land cools down.
When morning arrives and the sun returns, the olive responds differently.

The olives selected for SINUO NIGHT are harvested earlier in their ripening process.
They are greener, livelier, with a more pronounced expression.

The olives destined for SINUO DAY remain a little longer on the tree.
They reach a calmer, more balanced maturity.

We do not harvest according to a calendar. We harvest when each olive tells us it is time.
We seek nuance, not uniformity.

SINUO NIGHT

We harvest during the dark hours, when the land cools down,
selecting olives at an earlier stage of ripening.
The fruit is greener. Its expression is more intense.

Lively and vibrant, with green notes of artichoke, tomato leaf, fresh grass and green almond. An olive oil with tension, freshness and an elegant intensity that lingers on the palate.*

Maridatge

For intense dishes,
rich textures
and flavours with contrast.

Grilled meats.
Ripe tomato.
Oily fish.

Fire-roasted vegetables.
Aged cheeses.
Dark chocolate.

It is an olive oil that completes a dish.
That brings character with a single gesture.

WHEN WE SEEK INTENSITY, WE CHOOSE NIGHT.

SINUO DAY

We harvest in daylight and allow the olive to advance a little further in its ripening process.
The fruit is calmer.
Its profile is rounder and more balanced.

Smooth and balanced, with notes of ripe apple, young almond and delicate vegetal nuances.
An elegant and harmonious olive oil with a subtle yet persistent finish

Maridatge

For dishes that seek
balance, light
and quiet depth.

White fish.
Delicate rice dishes.
Gentle vegetables.

Fresh cheeses.
Warm bread.
Slow-cooked cuisine.

It is an olive oil that accompanies.
That brings flavours together without imposing itself.

WHEN WE SEEK HARMONY, WE CHOOSE DAY.

THE DIALOGUE

DAY AND NIGHT ARE BORN FROM THE SAME LAND.
WHAT CHANGES IS THE LIGHT. AND THE MOMENT OF RIPENING.
TWO WAYS OF EXPRESSING THE SAME EARTH.
