In our land, light and temperature shape two very different moments in the field.
When daylight fades and temperatures drop, the land cools down.
When morning arrives and the sun returns, the olive responds differently.
The olives selected for SINUO NIGHT are harvested earlier in their ripening process.
They are greener, livelier, with a more pronounced expression.
The olives destined for SINUO DAY remain a little longer on the tree.
They reach a calmer, more balanced maturity.
We do not harvest according to a calendar. We harvest when each olive tells us it is time.
We seek nuance, not uniformity.
We harvest during the dark hours, when the land cools down,
selecting olives at an earlier stage of ripening.
